Fan during day/night?

I seem pretty prepared for one my only concerns are how small they are (when 3 months old) but my big issue is the temp drop. I thought I had a way but it couldn't happen so thats really the only thing i'm shaky on.

Two words: Evaporative Cooling
It's possible to achieve 10-13F drop in a humid environment.

I place computer fans atop all my glass cages, with it pulling air up and through the vents on the door. I only run them during the day, off at night so humidity will get up to 100%

Yes, on top to draw air from inside outward—not blow downward into the enclosure.

and how many should I use

One should be sufficient for a typical 2x2x4 enclosure. The one I have moves a volume of air greater than the volume of the enclosure every minute. This isn't likely to happen in the real world unless you were dealing with a sealed system, which you're not. But it should still be sufficient for what you're trying to do.
