Chinese Cabbage

  1. Good for gutloading, in moderation. Chinese cabbage (Bok Choy, Pak choi) provides Thiamin, Niacin, Carotene, Vitamin C, Vitamin K, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Potassium and Manganese. Similar to kale, in terms of oxalic acid content (some, but not too high like spinnach or chard). However its on every Goitrogenic list, like most cruciferous vegetables (Broccoli, cabbage, kale), so it should not be a major gutload item on a regular basis. If you are going to offer a lot of goitrogenic foods, consider also including things like coconut (which is good for thyroid, might counteract), or you might steam the veggies (cooking reduces the goitrogen issue)
