Today my chameleon looked like she was rubbing her head on the branches almost like scratching. Is that normal? Then she had her mouth open almost like a yawn a few times.

Scratching when something itches? Yes, I think that's normal.

Then she had her mouth open almost like a yawn a few times.

Yes, they yawn too, which is also very normal, but they can also open their mouths for other reasons—thermal regulation, defensive posturing (sometimes accompanied by a hiss), and/or URI to name a few...
