I live in Arizona. I want to get a screen cage, but my moms insistent on an aquarium. She says its better to keep humidity and such in, and I figured if we made a whole wall out of screen (76" by 18"), the airflow would work better

Whats a chimney effect? With glass you need to have a chimney effect. Lower front ventilation and the top screen or you risk stagnate air causing health issues for the cham.
One we're planning to buy. How would I make a chimney effect?
We're planning to put something down the middle or towards the end, so as a baby, he won't be too intimidated by the space. Than, when he gets older, we're gonna flip it, and turn the top into a door
That's a good point, I'll see what I can do. If I get a screen cage, do you know how to keep ventilation in?Aquarium glass is also thicker unlike the exo terra glass. Definitely a bad idea. Go with a clearside dragonstrand if you can, if not exo terra's will do. Or a screen cage with solid panels or plastic covering a few sides.
I just assumed since many are raised in captivity, they're more comfortable in smaller spacesThis is a myth, chameleons aren't intimidated by space. How do you think they handle the wild when they are on full grown trees?
