I hardly ever get to see mine drink. She hates when I mist the cage cause I try to mist her too. Very rarely she will come closer and let me mist her and I will get to see her lick her lips to get the water thats beading up on her.

You can also take a plastic yogurt container and poke holes in it to secure it to the side of the cage with wire. I use a deep one that my cham can hang at the top of and launch her tongue and get the bugs in the bottom. (makes it deep enough usually that the bugs cant crawl out of)

I dont think depth would matter that much. Its really height that you are looking for so they can climb. I believe the typical is 2x2x4 just because it allows for branchy live plants.
