Dried veggies

How nutritious are dried veggies and fruits? I know they aren't as good as fresh, but what could these offer?

From what I remember from culinary school. The act of drying destroys vitamins A and C. Let me see what else I can find.......runs off to grab nutrition book!

Here is a paragraph I found:

"The nutritive value of food is affected by the dehydration process. vitamins A and C are destroyed by heat and air. Using a sulfite treatment prevents the loss of some vitamins, but causes the destruction of thiamin. Blanching vegetables before drying (to destroy enzymes) results in some loss of vitamin C, B-complex vitamins and some minerals because these are all water soluble. On the other hand, blanching does reduce loss of vitamins A, C and thiamin during dehydration and storage."
 
Alrighty then. I've been adding veggies and fruits to my dry gutload lately. Some blanched, some not. I'm not too worried about the vitamin loss as I have plenty of vit A, C, B complex, thiamin, plus more along with lots of minerals.

I'm still using fresh veggies of course :)

just curious...why don't you leave the fruits and veggies for the wet portion(and switch it up every week) and only use the dry gutload for things you obviously purchase dry(bee pollen, kelp, baker's yeast, spirulina etc)?
 
I already have a bazzilion veggies and fruits all the time. I never seem to be able to use them all so I just dehydrate some and blend them in when I make some dry gutload. The bugs seem to enjoy the batches with more fruit in them. I just about always have fresh veggies in the insect containers (usually more than they can handle.) My guinea pigs are lawn mowers, but they can't eat the same types of veggies so frequently so they can't help me get rid of them all the time :)
 
I personally would eat the dried fruits and veggies, seems like a good small snack!

Do you have your own garden?
 
Dried collard greens and dried butternut squash make me want to throw up! They stink and are nasty. I eat the fruits and carrots and a few other veggies, but a lot of it is really nasty.

I grow a lot of veggies indoors in the winter. I wouldn't call it a garden though.
 
i thought the code word for that was 'tomatoes'....but seriously, i have found myself at the local hydroponics store a few times recently picking up items for a vivarium i am making! so glad i didn't have to have hydro-balls delivered to my house, seemed...suspicious haha
