I don't know if they would eat the basilisks, but a green tree monitor would be awesome if the space is large enough. They're active and don't grow very large as far as monitors go. Green basilisks are some of my fave lizards but they do tend to be pretty shy.

My take on it is almost anything is ok and maybe beneficial if you use it once in a while. The problems start happening when you get too much of a particular thing all the time, with the flakes it's probably too high in protein which would lead to problems if the chams ate it every day.
No way! Besides the obvious "what if the cham eats some dirt", there's an off chance that if your cham eats leaves it could it in their system. Get some fish emulsion or bat guano if they needs a boost.
