My cat's are easy care and Bro-in-Law will come to feed them. The birds are sent to a friend for care. What on earth am I going to do with a chameleon that needs very specific care?

hmm what helps ALOT is have the lights and a misting system on a timer...
and all a friend or family member has todo is feed them.
but it really depends how long is your vacation...the chams can go a couple days without food...but make sure to have water.
if you dont have a misting system....maybe find someone to go to your home and mist them, add a dripper, and feed them with directions of how to dust the bugs
i have a neighbor that watches mine for when i take road trips i showed her how to water and feed them and refresh her when i go next. i would go to a vet or to my friends reptile store and they would sit them for me but i got 10 total chams now so thats just to many trips to take. so have someone you can trust and watch them for ya!!!
Depends how long I'm going to be gone. If it's just a weekend, and since I have adult chams that are eating every other to every other day, I just leave them as they are, since their lights and misting are automated.
If it's longer than a weekend and I can't take them with me, I have a friend that will pop in every couple days to feed them and refill/empty water from the misting system. If things like their lights and humidity are automated the only thing left to do is feed them, and this is easy for most people. I haven't had a problem finding someone who is competent to do this yet.
