What kind of cheese should I make?

several. Excluding things done as a kid, I've had 4 so far. I get bored after 5-10 years in any job. I live in an expensive town, so retirement isnt an option, and I hope to live perhaps another 30-40 years....

But instead of selling cheese for a deli, Maybe I should learn to make cheese and sell it at one of the local markets. I may be too lazy and impatient to do it now, but I expect to get slower as I get older, so slower processes might be just the thing.... :)


Im pretty sure you cant go wrong with Asiago OR Gorgonzola.

Well, I am not sure I can make Asiago with the milk i bought last night now. I decided to change the milk my Kefir grains were in and used the 2% milk jug I bought last night. The concern being the yeast in the kefir grains contaminating the milk as it was poured into the container the grains were in (I was not thinking).

Soooo..... I suppose it will be gorganzola (or brie... I have yet to make brie!)

By the way, I was not able to start last night because I could not find any cheesecloth, so instead I pullout out some Gouda that has been aging for 2.5-3 years. Man that is some dang good cheese.

Ok, I am starting to sound like a freak here. Sorry, I really like cheese. Its hard not to be excited when you taste the fruits of your labor that you have been waiting 3 years to taste.
