i opened up his cage with 1 finger and he instantly just tried to grab my finger with his tongue. Is this normal ? It kinda spooked me.

Lol. Have you been working on hand feeding recently maybe? Mine will be ready to grab my fingers or the tongs if I've recently bought and fed their favorite foods. Or perhaps your guy is just associating you opening the cage with bringing in the grub

He probably just associates the cage opening with being fed, complete normal. If you want them to stop doing that have them associate food with tongs instead of just the cage door opening, and open the cage for other purposes as well like misting, handling, cleaning ect. They will learn that tongs means food, not just opening the cage
