For any one who was helping out on this thread;
My cham has gone back to his normal behavior and eating habits.
It turns out the root of the problem had nothing to do with the feeders or dish used or the arrangement of everything in the cage.
The problem ended up being people handling him without me around and without my knowledge.
My roommate and his ******* friend had taken it upon themselves to handle him when ever they saw fit. Mind you, neither of them have any experience or knowledge relating to chameleons and I can only imagine what this poor little guy went through thanks to them.
I found out because my roommate mentioned taking him out while I wasn't around and the weird colors he changed to.
Shortly after that his buddy decide to walk into my room with me there and help himself to my chameleon without permission.
Needless to say this ended with me telling him he wasn't welcome in my house if this is what he saw as acceptable behavior.
Since then I've laid down some ground rules about my chameleon. Rules I thought would go with out saying, but turns out I was wrong. And since he has started eating again and has gone back to his usual colors.
I still haven't tried reintroducing the roaches. I figured I'd let things settle down a bit before changing it up again, but he has started eating super worms from my hand almost every time i offer them, so that's some major progress!
