how much would it hurt to rearrange her enclosure?

not happy with the set up, want to rearrange branches and plants..

You may want to add more plants to the bottom of you enclosure. That is to rise up and above the Pothos plant on the bottom of your enclosure. That should add more vertical branches too.

You could add a Weeping Ficus or Schefflera. :)

I have large clear container to place my chameleon inside. I put some branches and place the container in a dark room while I rearrange the cage/do maintenance cleaning. Have some leather gloves. They act like drama queens. But for a good reason.
 
Some dragon ledges would help you secure more branches and climbing opportunities with more ease
These really are great for creating the levels and highways in your enclosure. I always try to make vertical levels at three areas in the environment. Upper, middle, and lower like a three story building with a few options to navigate from one level to the next

Dragon ledges, or something like them, makes this process so much easier. Grab a bag of zip ties and some hedge trimmers and you can make whatever sort of Cham gymnasium you like

And yes adding a taller growing plant at the bottom will create more shelter and more highways to climb in and around and over
