Looking at the Exoterra large/x tall 36x18x36 all screen cage, what everyone thing on these? And is there a good way to avoid any rust issues?

Won’t be large enough for panther or veiled need at least 24x24x48. Dragon strand enclosures are rust proof... wwwdragonstrand.com not

Depends what you want to keep. You would might consider the X wide X tall.
They don't rust. Glass, plastic and aluminium screen means there's nothing to rust.
You need to look at the best method of removing excess water that will work best for you.

I feel like the humidity is a bit harder to keep up. But Grimm here loves his cage. He used to be the kind to constantly try to get out and since getting this one that has stopped completely. I'm not sure his exact age but the vet said he's right around mature for a veiled. I was worried he'd end up not liking it but he seems to like this one fine!

Plexiglass works wonders. Velcro tabs on them to hold in place and when they need cleaning you can take down
