I also have questions about the open environments.
How do you keep them from running off?
Wouldnt they poop all over the floor?

Plenty! Just search around. DIYcages is a site though. I use one of there 2x2x4 and love it. For $100 shipped, its a great cage. I also do a free-range. I dont have a problem with poo on the floor, but maybe Ive just been lucky! You can see my free range here:

My guy ALWAYS poops in the plastic drainage bin on the bottom. They seem to like to poo in water.
EDIT: I also use a mistking in my free range, it hits a small shefflera though, and collects on the plant and drips straight down into a plastic bin. The advantages? Well, your cham is free and happy, not closed in. I also enjoy him roaming around, you just have to be carefull! And keep track of where they are!
