Does my jacksons look healthy?

In the last picture, he is more upset than usual. But is this a 'normal' color for jacksons to be all the time?

A really relaxed jax male would be mor of a solid leaf green, no darker markings as an adult.

I'm sorry, but is he supposed to stay a light green or be more like those dark green patches?

a happy, non stressed jax is green.

an unhappy, stressed, ill jax are like your pics.

His size and weight look good and his eyes don't look sunken. However he looks too drak/patchy. He should be a solid light green possibly with blue/yellow/darker green hints... absolutely no grey/black/brown. How long ago did he start his shed... is he retaining shed?

He shed about 3 weeks ago, and a few of those pics are older.

This is the color that mine is when out of cage. He did darken up when I put him back in which means he was stressed. Is that white specks on the side skin shedding?

Yes that is shed skin. Just hadn't fallen off.
