How large would a cage need to be to house two Jackson or Veiled Chameleons?

1200X1200 feet. Seriously, I would not house them together.

You should not put them into the same cage without a physical barrier. They shouldn't be able to see or get to one another. More than one cham in a cage is very stressful for the animal and a very bad idea.

If you had babies.... you could house them together grouped by size till maybe three or four months.
