As stables i use dubia roaches and Crickets... for treats i use hornworms and silk worms... i don't see why your chameleons behavior would change unless your giving him feeders such as wax worms or too many meal worms, also avoid feeding "pinkies" or feeder mouses as they are very fatty and cause problems such as gout.

Welcome to the forum :) The best feeder is variety. As many different kinds of insects as you can cope with. Here is a great list to look at - https://www.chameleonforums.com/blogs/sandrachameleon/74-feeders.html
No change in his behaviour is good, it means he's probably not worried about anything :)
Here is a great caresheet for Veileds that even I'm starting to get bored of because I recommend it to everyone on here that says 'Veiled' - https://www.chameleonforums.com/blogs/chameleonsinmyhouse/395-veiled-chameleon-care-sheet.html

a variety of prey is the best way

good choices include:
gutloaded terrestrial isopods, gutloaded and calcium dusted crickets, gutloaded silkworms, gutloaded butterworms, indian walking sticks, blue bottles....
