Any vegetarians?

Hi I was just wondering if there were any vegetarians around. Since prices of meat (everything really), I'm thinking about making more vegetarian meals, with occasional meat meals. Guess in away it will benefit us, the feeders, and the chameleon, lol. So I was wondering if anyone had any good recipes they wouldn't minds sharing

I'll ask my daughter when she gets home from class. She's vegan so I'm sure she will have good ideas. I know we make lentil soup with a tomato base that she loves.
