3 month Jackson keeps opening his mouth

My husband got our 3 month male Jackson on Monday at a local petshop. He seemed very active and was shedding nicely. He likes being handled and walking around our house. Our first chemelon died a month ago and we had it for a year.

Name: Spyro
Enclosure: Reptarium 16.5 x 16.5 x 30 inches. Has natural dried branches of trees, nothing on the floor and no glass anywhere.
Feeding: 5-6 1/4 crickets and random fruitflies. We feed the crickets with fruits, vegetables and potatoes.
Supplements: I've been waiting for them to arrive at the petstore.
Watering: Spray bottle with filtered water to mist his cage 3-4 times a day for 3-4 minutes. He actually loves to get wet and walks into the mist and starts drinking water. I make sure he drinks whatever he wants.
UV light: we put his cage near a window on a coffetable so he could get natural light and establish a sleeping cycle according to the sun.
Location: Puerto Rico, our city is hot, usually 87-95*F during the day, 70-75 at night and has a humidity of 64-70% on normal days. It rains almost every other day and we live on a 6th floor so we have great ventilation and cool breezes.

Current Problem: Chameleons are not very common pets in PR so its very difficult to find the essential things like crickets, supplements, rept vets, etc. He had to go two days without food because of the 4th of July and the fact that the crickets arrived today. His poop was normal but today I saw a little bit of yellow in it. He doesn't have any other symptom of dehydration and he is still very active. Just in case, I gave him a little bit of Pedialyte this morning. What worries me most is that he has been opening his mouth all day for a minute and then closes it. I guessed it was because of overheating so I looked for remedies on this page. I tried misting him with water for 10 min - never directly to his face - and soaking his legs in water. He seemed to enjoyed it and then he was ok for a few hours. Now its doing it again. I read about R.I. but he doesn't make sounds when breathing. I'm scared to keep misting him. Don't know what to do!!!!!
 
Ya hes over heated, is there any cooler place he can go to? misting him isnt bad for him at all unless it is blasted in his face. I think he will like the cool mist
