As said, the plants are fake. The lighting might be heating the plants up a little to much. This might create a chemical smell, or if familiar, burning plastic.

It sounds like your doing what you can. You could try offering some variety in his diet and see if he takes to anything else. Monitor if he is using the bathroom and just keep making sure you pump the water to him. Some chameleons will do hunger strikes for various reasons. Good luck to you

Glass enclosures can be bad for chameleons, even the exo terra ones can cause problems simply because the lack of air flow and reflection. To further your question about housing two chameleons together...most chameleons are so territorial they even hate there own reflection..so that may help...
