What are some ways to calm/soothe any chameleon?

Or what do you do to calm your buddy?

Um, in what sort of circumstances? If your cham is generally stressed and hard to handle all the time, you can help get it used to you by setting your daily chores on a routine (chams don't like surprises and they do better with a predictable routine). Offer favorite insect treats by hand or in a cup held in your hand. Not all chams tolerate much handling by humans. Some are more antisocial than others.

If you really need to calm a cham down quickly in a particular situation, turn off the cage lights, cover the cage, and let it cool down. They are less reactive when their body temp drops and there is less light.
