I'm going to make new doors for my cage because I don't like the screen ones I have. Does the type of screen or mesh matter or can I just use like window screen?

You want aluminum screening. Feeders will eat through the other kind. You can usually find rolls of black aluminum screening at Lowe’s or Home Depot.

What's the best size for feeders not to get out? Or all screens the same size

there are typically two sizes for window screens. One is insect screen size and the second is for small insect size. You can guess which one is smaller and tighter weave. The small insect size is not carried often by hardware stores and will cost you quite a bit more because it takes more material and not as much in demand.
