my guy has a little piece of skin right on his head between his eyes from his last shed that just won't come off. It's been like 2 weeks since he shed and it's still there. Everywhere else was a nice shed that came off in a matter of hours.. Should I have any concerns about this?

No, occasionally they get small bits that just won't come off. It'll most likely come off with the next shed.

It should be fine and come off on the next shed but if it bothers you you can use a wet qtip and lightly scrap it
