It isn't really "reversed emotions", but rather a misinterpretation of them. When you take a cham out of its territory and handle it, this excites it, and the cham reacts with a flare of coloration. Just the activity and higher level of stimulation triggers a release of stress hormones (not all stress is negative) which fires off the color change. Now if the stress keeps elevating to fear or anger his color will continue to intensify past the bright stage into darker higher stress coloration. When he's very calm, a bit bored, and content his coloration will be duller. Depending on his age many veileds go through a phase when their content quiet coloration is more brownish.
