It does look like MBD, does the vet you visited specialize in reptiles? Because it looks like encephalitis can have many of the same effects as MBD so if he is not experience maybe he got them confused? I know MBD can cause them to grab themselves and have seizures, see this article:

Is your UVB a strip light or a CFL, and what wattage is it? Do you ever see her basking under it? Since she was housed with the male for a long time he could have prevented her from basking and may have also hogged the calcium that you did provide. Is she getting UVB currently? The vet can provide a calcium shot but she will also need plenty of UVB to recover.
