I was just wondering what would be a good substrate for live plants, and how to go about setting up my vivarium using several types of plants hanging and on the ground. I especially want to know what's used for the soil at the bottom. Maybe there's a thread about this?

You'll find lots of threads on the topic of soil and repotting - use the search function.

I use a mix of sand, coco fibre and peat, and a little of my own compost soil. The more organic, the better, incase some is eaten.

Actually, I mostly dont use any soil at all. Only have a couple potted plants. I mostly just grow pothos in jars of water, which I've got attached on one side of each cage. and there's a couple in soil on top of the cages and the vines have grown down into the cages.
I found keeping tree-like plants more hassle than it was worth - my chameleons dont really seem to like plants, and hang out in the open areas almost exclusively. I keep the pothos cuz I like the look of living plants and it provides an option to the cham on those rare occasions when it wants to hide.
