In her cage you should have a small container of dirt/sand so you can see when she needs to lay. Then you can transfer her to a bucket atleast 12 inches deep with moist playsand. Moist enough to dig a tunnel (you can poke your finger in and make a starter hole), but not so moist that it collapses. Whenever she's digging make sure to give her privacy. If she is disturbed or sees you she'll abandon the tunnel and become eggbound. When she's fully done, which could take a day or night, give her extra mistings and extra calcium. To prevent her from having too many eggs, which is hard on her, lower her temp and feedings. The eggs she has will not hatch, so you can just throw them away.
The roots can be an issue. They may prevent her from being able to dig down into the pots. I would just put a laying bin in there to make sure she has a place to dig.
