I just got my baby veiled Cham yesterday:D

I have a dripper and mist him 5 times a day or so

But I never really see him drink except when I first put him in his setup.
Should I see him drink, or am I just overly paranoid?

He might just be drinking when you aren't around, as long as there is plenty of water on the plants for him to drink I'm pretty sure he is sneaking drinks here and there.

You usually will never see them drink. Occasionally i see mine drink but if i look at him he stops and gets angry.

The way to know if he is drinking is to check his urates they should be white. If he is not getting enough to drink they will be yellow or orange. You can add a dripper for more drinking options, you can even make one by poking a small hole in a cup.

Hahah

I had one other question, how much handling is to much handling?

I had him out earlier running around on me and bed for about 5-10 minutes but he started to turn brownish so I put him up

I would give him a week to settle in. I have heard different opinions on handling. Some say handle often, some say hardly ever it stresses them. I try and read my chameleons ( like you are doing ) get to know your chameleon and if you see signs of stress don't handle. I have some that enjoy being handled often and some that don't. Enjoy your new chameleon! They are so awesome! :)

mine has learned to come out of his cage on his own and once he gets out he lets me move him and hold him often but he dosent really like he i take him out.
