could i run my misting system every other hour or so during the night to maintain humidity? would that work?

A cool mist humidifier for a few hours every night works well. There are fancy ones specifically for reptiles or you can use a regular inexpensive human one.

in a room with the door closed would the walls get all wet and would the room get musty?

How big is the room? I'd run a little air circulating fan if you are worried about humidity(set a hydrometer up in the room). I had the problem of my room getting too humid when running the fogger so I stopped.

pretty small, it’s a guest room in the basement with two windows.
