Can I sleep with my ceiling fan on while I sleep or will that take away too much from the humidity of my chameleon enclosure which is also located in my room ?

You can, I would suggest getting something to wrap your enclosure in to both insulate the humidity and give your cham complete darkness to sleep in I got a few yards of fleece from Joanne's for a couple bucks and sewed some velcro patches to it. Very easy.

Generally the room humidity is the cage humidity, unless your cham is in an all glass cage.

This! Which is why I find it easier to control a room than 2 2x2x4 enclosures.

I’m using a mister which goes off every 2 hours

You can boost overnight humidity by directing an ultrasonic cool mist humidifier directly into the cage.
