how to exercise your chameleon color

i have a veiled chameleon and i was just wondering how to exercise his color

???? What do you mean? Color change is a hormone controlled response to stimuli, not a muscle that someone can train. If you try to force your cham to fire up and show bright coloration too often you'll end up with a sick animal. Some stress is OK, too much is risky. Color change is also a gradual process triggered by increasing stress.
 
If you want your cham to be the most vibrant he can be (I assume this is what you mean), health and nutrition are critical. Have a really good gutloading process for your insects, keep on track of supplementation, have a good variety of insects to feed him, and make sure he is well hydrated. Giving him access to natural sunshine will also help his colors pop.

Do remember the some chams are just naturally more colorful than others :D

are you thinking about bettas? bettas get exposed to each other so they will flex and show off.
with chameleons it is more about a good nutrition and genetics and a good light source ( natural sun light works best).
