Chameleons don't have a fat tissue between skin and ribs. Your chameleon will always look "skinny". But this has nothing to do with his nutritional condition.
It's even normal for a chameleon to eat everything he gets. In nature, he has to do so because he never knows when there will be the next insects. There may be days or weeks without any food, so a chameleon will always take everything he's able to shoot at. In captivity we overfeed them fastly due to this behaviour.
