Thats a katydid! Maybe a meadow katydid. Safe to eat - they are very similar to grasshoppers, but katydids have long slender antenna, and grasshoppers have short stubby ones

Oh? I guess I didn't recognize it, I'm used to seeing katydids with sharp rhino-like horn-like structures where the ovipositor is.
I'd thought this one's face/head was too narrow, too. At least I'll know for next time I catch one. ?
There are a bunch of species. Meadow Katydid, Conehead (yours might be this), Common Katydid, True Katydid, Anglewing, etc. some have very minor differences
