The holes will most likely not be enough ventilation. There needs to be large holes cut on the side and galvanized wire bug screening to cover it. Which is probably why your crickets and food are turning to goo, too much humidity. You should still change the food out every other day. I do that with my roaches.
Edit: There's Cricket Crack, Bug Buffet, Super Chow, and Spoiled Rotten Roach Chow. The last one is the one I make, it's going to be available through Nick Barta soon, I have never use the other three but I have used mine regularly and even in GBR container which has about 80% humidity on a regular basis doesn't mold or turn to goo until about the 2 week. I assume anything with the base being alfalfa would have the same affect. I think alfalfa is less likely to mold, though I'm not for certain.
