So,
I have had my vield chams for about 2-3 months now and they went from sweet loving little chams to out of control monsters (overstatement)
The male is opening his mouth and puffing whenever I come near his cage.
Is this a sign of maturing? he has been showing amazing colors recently also

He just might have a very bad attitude. That's how some chameleons are. Don't jerk away quickly because then he will think that his hissing is actually working to keep you, in his mind the predator, away. Keep your hand still. Have you tried hand feeding? This makes them think that we are good for giving them food. Also, when they grow up, they tend to be more independent. I would definitely say age causes this.
