does anyone use bedding if so what do you use?
if not how do you keep the humidity high?

Not recommended.

Lot's of live plants will help with humidity.

misting
a dripper dripping throughout the day
keeping the chameleon in its own room
a humidifier either in the room/area or connect to your central heating/central cooling
having fish tanks nearby
NOT using an all screen cage
