Welcome to the forums! I have a veiled and 2 panthers, and there is really no difference at all to their care. All three are in cages all in a row (with sight dividers), and all are on the same automated lights and mister timers. All get fed at the same time, and roughly the same amounts - one panther is a female a little younger, so she gets smaller feeders and a lower quantity.
As for friendliness, personally my veiled is a giant chicken, but my male panther only wants to come out and climb on me. My female panther is learning to trust me, slowly, as is the veiled, but it's a process. There are members on here with friendly veileds and unfriendly panthers. My advice is to choose the one you like the looks of and find a reputable breeder on the sponsor page or in the classifieds. Traits like friendliness are often inherited, and it's also dependent on how much they were handled as babies. Big time breeders may not have the time to spend getting babies acclimated to humans, whereas those in the classifieds may just breed for fun and have more interaction with them.
