Well, I am not sure I can make Asiago with the milk i bought last night now. I decided to change the milk my Kefir grains were in and used the 2% milk jug I bought last night. The concern being the yeast in the kefir grains contaminating the milk as it was poured into the container the grains...
Dryer cheeses like Parmesan are usually pressed longer to expel more whey and generally a lower fat milk is used. Parmesan is also aged longer, usually no less that 9 months I think.
I just got back from the store, picked up two gallons of whole milk and 1 gallon of 2%. I tentatively planned to make asiago but can probably make whatever. (Now, the next question is do I have cheese cloth... did not think of that....)

Never made it! Actually, I dont think I have ever made one of the dryer Italian cheeses. I think I had planned to make Parmesan cheese one time (or rather the vegetarian version...) but ended up not making it for some reason. I am a big fan of what are called "Washed curd" cheeses like Gouda...

Ooooooohhhh.... nothing like home made pasta! Its super easy to make too (with the correct equipment). Dry stuff does not compare.
Lol, ok but cheese making take a really long time.... at least for most of the hard cheeses. Some you can get by with a shorter aging period but almost never...
Well... what kind of dish are we talking about here? I would have a hard time seeing a chamelon fall into a typical reptile watering dish and drown- especially if you have some vines drooping down near it.
