When you mentioned your panther chameleon lightens its colors when feeding, this is usually becuase of excitment due to feeding. As Prism Chameleons mentioned, they vary their colors according to their moods.
Darker colors absorb heat, and lighter reflects heat. Darker colors and sunken eyes...

Well, Ive been looking at alot of photos of adult veiled chameleon that were taken recently, and they were around the age of...mmm...I would have to say anywhere from 8 months to 2 years of age.
The Wild caught male veiled chameleons seem GIGANTIC, but it almost appears as new...
Cobalt, Ambanja/Nosy be cross JUST as he neared 11 months old. His colors weren't fully developed at the time.
