I was going to go with a regular double kitchen sink, but I found these first, and they were MUCH cheaper. Since they're out of season, they were like 75% off. Maybe you can ask the people at the local walmart if they have any in stock still.
As far as live plants go, most go with pothos and schefflera. Other people often go with ficus and hibiscus plants as well.

I wouldn't worry. Once you have everything setup and settled you'll get a more accurate reading.
I suggest getting a digital reader for both temps and humidity if you can - they're not always 100% accurate, but they're known to be more accurate than the dials.
I live in Canada too, and my house gets pretty dry as well. Veileds can withstand a lower humidity than many other chameleon species. The important part is hydration. I see my chameleon drink from his dripper, and his urates are always white, so I'm ok with the amount of misting I have going...

I think I got lucky with my little veiled. The only time he's ever been stressed was when I had to give him eye drops. Other than that crazy week, he's been cool.

Started furnishing - hooked up the UVB and UVA Grow light for the plants - just waiting to get the mistking in the mail - should be here any day now :D

Found a solution to my problem. I used garden lattice stretched and cut to fit the entire bottom of the cage. I zip-tied 4 bamboo sticks on each side to keep the lattice from stretching or collapsing. Et voila! Somewhere for my plants to sit :)
And we finally put the top plate...
