Without a vet, you may never know what's wrong with him, especially since he's from outside. You don't know if he was abandoned or not. You don't know what he ate while outside. It sounds like he may be stressed, but I'm not a vet, and have no idea what your husbandry is setup like...
He needs a vet asap. You don't want to go the trial and error route, especially before seeing a vet.
Definitely needs calcium everyday. I don't care what petco says... there's hundreds of owners here who say calcium every day, mutli / cal+d3 twice a month.

I say go nuts with the foliage. The more spaces to hide and climb the better. He'll feel more comfortable in his house and that might eventually help with taming.

Crickets do not drink from water dishes... they can drown in a drop of water. Instead they get it from wet veggies and fruit, like carrots, oranges, etc. You're on the right track. There's a member here, sandrachameleon, who has written many awesome blogs and articles about gutloading.

Make a cage! It's almost as easy as assembling a store bought one, and wood is awesome for attaching stuff to. It cost about $90 for the 2x2's, and another $40 for the screen, and the bottom varies depending on what you want to do for drainage.
