If your shaking them around in a cup i guess it could be possible to hurt them.
I use a bag- and never have that problem.
it really doesn't take much shaking to get them coated with the vitamin powder.
When I use cricket keeper tubes i just turn them end over end a few times very gently.
yeah that stuff rocks- I always have some on hand.
my anole loves the stuff- I give him .1cc like every month or so and he just can't get enough! (vet said it was okay) He's really big and healthy.

yes you can feed them to your chameleon as long as he is big enough to eat them!
When they are in the in between stage they don't move around very much, so it might be hard to get your chameleon to notice them.

As stated above, I think that your kids could handle it as long as you take some responsibility yourself.
Keep in mind that a well cared for chameleon can live up to ten years.
Consider what will happen in three years, when your kids are 16 they may be more interested in partying then caring...
