There's a lot of exposed moss, which can pose an impaction risk. Otherwise looks nice.

Elephant ear is not a specific species, when there are several different elephant ear species from Madagascar. I'm not experienced with differentiating them, as there are minute differences that can separate them. But if I were you I'd speak with your breeder.

If it was captive bred, why wouldn't the breeder provide the species of the chameleon?

Please be more specific. There are multiple species that can be considered "Elephant Ear" chameleons.
