Theres a couple things.. Lose the dish, and the chameleon should not be in a glass tank.. They need fresh air and need the open ventilation of a screened cage. What are your basking temps? Poop is directly linked to temps in the cage and since it is eating well i figure it should be pooping...

Normally they will poop once every couple days if they are on a good balanced diet.. Some may poop every day. It's not really the food that is the problem.. It's the temps.. At your temps which are kind of high the animal should be producing stool regularly even though 95 is kind of high...
