Is there anything I can do to help my female veiled while she's shedding, or is it better to just leave her be.

Better to just leave her be. Healthy chameleons do not need help to shed, as it is a normal process which wild chams do successfully their entire lives with no help. Unless the shed gets stuck around thin areas of the body and becomes restrictive, she will be fine on her own
