As far as your questions go, yes, they will most likely breed. And you will choose a female the same way you pick a male - you shop around at responsible, trust-worthy breeders for a male/lineage you like or that will compliment that of your male and select a healthy individual.
However, females take more work than males. You have to keep their temperatures and food intake steady and lower than that of your male, and if/when she lays all sorts of things could be wrong. It's stressful to have a female! But also very rewarding, I love my panther girl, she's just the prettiest little thing.
Be prepared to not make a dime back when breeding though. You will go through HUNDREDS of crickets to feed the babies in a week, and thousands a month. Most small time breeders never make any of their investment back. Also, it'll be harder to sell the females so you'll probably have to house them longer, which is more money.
There are things to consider, make sure you look into it a lot before you try. It isn't like breeding two geckos together, which have 2 eggs at a time - they may have 20-30+ eggs at a time!
