Any ideas or recommendations on how to cover up the enclosure so that your walls do not get wet while misting your chams enclosure?

Yes, I had the same problem. I attached a shower curtain around 2 sides of my enclosure.

It's pretty easy just take a big shower curtain, and tape it to the enclosure. It will also help with humidity.

I use the weather plastic covering they put out in winter to cover your windows. Comes with double sided tape and stick it to the frame. Worked like a charm. We already had some so that worked well.
