I am not the first person to use a greenhouse without the use of additional uv lighting. I wont mention names but one of the biggest chamleon breeders in the US uses a green house that only the top allows uv to pass through and the sides are made of metal.
I have polycarbonate panels that allow 95% of uv through. I personally have not tested this, but I have faith in the company and the results seem to be working good.
I have been keeping chams in my greenhouse for about 6 years now with no additional uv lighting. I have no visible effects of any demise and they are doing better than when I used to keep them inside with uv fluro and mercury vapor bulbs. I will never go back to that again.
Generally chameleons are all show and no go. I have never been bitten by a chameleon although they look like they might. They usually just puff up open their mouth and start rocking at you. If you pick them up from underneath instead of from their back they usually just come out.

Japanese maples are very safe to eat. They also provide some needed vitamis and minerals. Just make sure that not pesticides (especially systemic as this can last up to a year) and no chemical based fertilizers. I mainly use hibiscus and crotons.

Black currants are very nutritious. The only problec is they have a very high acid content, along with the strawberries, and might cause diarrhea. You can certainly give them to your crickets though. I have tons of experience with various fruits as I am a commercial winemaker. Hope this helps
As stated, there is no nutritional value to romaine lettuce. If you want your veiled to eat some vegetable matter put a potho or hibiscus tree in there. My veileds love these and have a lot higher vitamin content than romaine. I dont even feed the romaine to my crickets.
