WOW, it looks great. I don't think you'll have any problem keeping them alive. They are very sensitive to changes in temperature so try and maintain the temp and you'll be good.
Summoner nailed it on the head. You can go up to your cham cage and scream and they wont wake up if you don't shake their cage. But keep in mind if you were woke up at 3 in the morning to YOUR house shaking. I'd probably freak out to.
Unfortunately, chameleons don't particularly like to be held. No chameleon likes to be held they just put up with it. If you search the site you will see that most everyone handles their cham only to clean their cage and the occasional photo shoot. A cham is like a piggy bank for stress...
I take the same approach. Crickets are my staple feeder so I go through them pretty quick. I say just keep stuffing their faces so they are nice and juicy for your cham. I would make sure that if the food is dried up and take it. I usually replace my crickets food every day.
