I used paper towels because it was cleaner when I removed them. Eventually I stopped doing that though because it's a huge pain in the butt! Like said above, these roaches really like to be in close contact, so make sure they can do that in the hides/egg flats.
How old is he? My adult animals never do whole sheds. It's always a section of the body/head or a limb. Most of the time, they are in almost constant shed because they only shed small sections at a time.
I don't think mine are at or above 40%. I just watch for any that die in molt. If they do, then I raise the humidity a little, if not, then it's all fine.

Some chameleons become more content to sit and stay when they are in a free range. I think it's because they are no longer confined and they have more room. On the other hand, some will just wander regardless (especially young males.)

He could still be looking for females and only has a one-track mind right now. How long has it been? Chameleons can get parasites from mating with an infected animal, so if it's been a while, I suppose it's possible that this could be a cause. I think that is unlikely though.
In my experience, veileds aren't all that sensitive to low humidity as long as they get enough to drink. I don't really worry about the humidity with mine anymore as they always have white urates and drink plenty. If his urates are white, I wouldn't worry too much.
That doesn't look good to me. The yellow stuff might be puss. It looks like it definitely her tongue though. For sure get to the vet ASAP and see what can be done. You don't want any infection to get so bad that it can't be treated and then needs to be amputated.

Sounds like a good vet so far! My vet doesn't have us fill out forms, but he asks all the important stuff. I always bring in the "how to ask for help" form to make it easy for them. I started bringing in modified versions of the form for all my pets.

Maybe you can just shove the roaches into the back of his mouth if he won't eat them voluntarily? I've had to do that before when they wouldn't eat the medicated bugs while sick. I just kill the bug before hand. Otherwise, I use a spatula to open their mouth. I use a small one that is thin...
Separate them immediately or the female may start to eat them. You will need to feed them small insects like fruit flies and pinhead crickets. For now, the most important thing is to separate them, and then start reading up on proper baby care.
